I woke up this morning and thought, “Today is the perfect day for Summer Passion Pudding.” It’s going to be 44 degrees C in Perth so I thought I’d better get on and share this recipe with everyone – it’s refreshing and delicious!
1 mango, peeled and de-seeded
1 passionfruit, scoop out the seeds
3 cups raspberries, frozen*
1. Add the mango and passionfruit to your blender. Then add the frozen berries and blend until thick and smooth.
2. Taste test! Are you happy? If it needs a little more sweetness, add a pitted date or two and blend again.
* Note that berries are often subjected to many harmful pesticides. These are one ingredient that it is important to choose organic.
I first found this recipe many years ago from Karen Knowler and it seems to make its way back on to the menu each summer!
